Systemic gastric acid control

Gastric acid secretion is controlled both systemically and locally by neurocrine, endocrine, and paracrine factors. Acetylcholine, histamine, and gastrin are all stimulating factors. Inhibitory factors include somatostatin, prostaglandins, and epidermal growth factor (not depicted). Although foods stimulate acid secretion, the pH usually rises in the post-prandial period due to the buffering capacity of the meal. An example of a 24-hour intragastric pH recording in a healthy volunteer is shown in the figure below.
